The owners of the popular Tabor Tavern in the North Tabor neighborhood, Ken “Zig” Naffziger and his wife Kristen Siefkin, have signed a lease at 8103 and 8107 North Denver in Kenton, where they will open a new neighborhood restaurant this summer to be called Swift and Union.
The name, Swift and Union, is a nod to the Kenton neighborhood’s history as a company town, when Union Meat Company and Swift & Company formed the industrial core of the community.
“My wife and I moved to the neighborhood about a year ago and we just love it.” Naffziger said. “We can’t wait to bring the Tabor experience to our new neighbors.”
The planned menu will be similar to that of Tabor Tavern with seasonally inspired pub fare, beer, wine and craft cocktails. The new gastropub will also offer Tabor Tavern’s signature bacon jam. Swift and Union will be open seven days a week for lunch and dinner and will offer a weekend brunch.
“We have been working on this project for months and are ecstatic that it is now official,” said Naffziger said.
