Red Sauce, the pizza restaurant Shardell Dues opened in Concordia last October, added a patio space in May to take advantage of summer weather – and to provide some additional seating for hungry diners who stop in for a pie after shopping at the Cully Farmers Market on Thursday evenings.
Dues hit the ground running last fall and continues to steadily build her business. Her space at 4935 N.E. 42nd Ave. is adjacent to the parking lot behind Gina’s Cafe, where the market is held every week – and the market has been good for business.
“I feel very fortunate and lucky to be here. I love my neighbors and I love my neighborhood,” said Dues.
Dues collaborated on the project with her neighbors from Metalwood Salvage, around the corner on Prescott. The Metalwood team procured four cast-iron pillars, bolted them to the ground, strung all the lights and helped to retrofit the wooden picnic tables, to make them safer and less likely to trip customers.
“It was their vision,” said Dues. “They said ‘Let’s do this’ and I said ‘Go for it.’ It was a group effort and I love the result. It’s increased our business by about 25 percent. It’s been wonderful. This street is really progressing with the farmers market and our Thursdays have just taken off. We have a Farmers Market Pie that’s awesome. We do fresh snap peas, goat cheese, cipollini onions and our house bacon on a white pie. It’s delicious and it’s available daily. It will be our special until the market gets into their summer produce.”
Locally-sourced produce has been one of the keys to Dues’ success.
“We get our produce from Stacy at Sideyard Farm in Cully, so our house salad is straight out of the ground,” said Dues. “It’s pretty awesome. I drive down to the farm and pick up my produce. I’ve never worked in a place where I could do that. We get these variety of salads that are beautiful and they taste as fresh as they look. We’re very fortunate to have all these people that grow this wonderful food and we put it on a pizza and it doesn’t get any better than that.”
Closed Mondays and Tuesdays, Red Sauce is open Wednesday through Sunday from 4:30 to 9:30 p.m. with plans to start opening six days a week in September and, hopefully seven days a week by the end of year.
