Three years after shuttering her North Killingsworth Street restaurant in Overlook, Pat DiPrima is once again baking Italian products at her new King neighborhood location, 4943 N.E. Martin Luther King, Jr. Blvd. This time, instead of a sit-down restaurant, DiPrima bakes to fill orders that customers can pick up as early as the next day.
DiPrima opened her first shop in June 2002 and closed the doors in December 2013 after a decade of steadily increasing sales and growth. “We did mostly retail, but some wholesale to clients like Spella Caffe and Piazza Italia Restaurant,” she explained. The new shop opened June 7, 2017. “This business is different because the menu changes every Sunday and there are just a few items for now.”
DiPrima Dolce, “Your Cannoli Connection,” always has cannoli in addition to either a mini-cake or tart of the week, along with an assortment of cookies and biscotti that also changes weekly. “I rent the kitchen at The Arrow Coffeehouse on Martin Luther King, Jr. Blvd. and Alberta Street three days a week, and am able to have most items for orders ready Thursdays, Fridays, Saturdays and Sunday,” said DiPrima, adding that sales doubled from the first to the second week. “So that’s good, and it’s small enough for me to do all the baking myself.” DiPrima employed between 10 to 20 employees at her first business.
Comments from people DiPrima described as “dedicated fans” were an impetus for the business restart. “It has been very gratifying to know how much they appreciated and loved our store,” she said, “and I’m thrilled to be once again offering products I so love making and sharing.”
